I’ve been wanting to bake a carrot cake for a few weeks now.

Finally found a recipe that sounded really good!

Ummmmm, It’s amazing! And the cream cheese frosting is probably the best frosting I’ve ever made!

You won’t regret making this if you feel like a little carrot cake and cream cheese awesomeness! It’s pretty simple and won’t take very long either. I’ve had carrot cake many times but I’ve never made it myself. This recipe is officially a keeper!

The only things I changed were:
– adding 3/4 cup chopped walnuts to the batter after adding in the carrots
– I also have no idea how much my bundt pan holds, so I baked it for 40 minutes, checked on it and put it back in the oven for another 15 minutes.
– I let it cool completely, cut the whole cake in half { horizontally }, added cream cheese to the middle, put the top half back on and slathered every last bit of cream cheese frosting all over the top and sides. lol you can sort of see a tiny middle layer of cream cheese frosting. Next time I will add more! { I love cream cheese frosting, what can I say ♥ }
