This combination was inspired on a lovely fall day when I was on my way to work, needed a coffee and decided to grab a bagel as well from Tim Hortons. It was a toasted and buttered Maple Cinnamon French Toast Bagel and it was delicious!
It didn’t really taste like french toast but it sure was yummy! I thought about how good it would be with brown sugar ice cream. I also thought it would be slightly weird to add bread chunks to ice cream but then I decided to just try it out, what could be the harm in trying, right?

Ohhhhh my… it’s super good! So, if you can get past the part about bread in your ice cream, then you’ll definitely want to try this! Amazing flavour combination!

Ice Cream
5 egg yolks
2 cups heavy cream/ whipping cream
1 cup milk
1/4 tsp salt
1/2 tsp vanilla extract
1/2 cup packed brown sugar ( divided into two 1/4 cup portions )
Maple Glaze
1 cup powdered sugar
2 tbsp maple syrup
1/2 tbsp milk
French Toast
2 eggs
1/2 cup cream, milk or half & half
1/2 tbsp vanilla
1/8 tsp cinnamon
pinch of ground nutmeg
pinch of salt
4 slices white bread { I’m using french bread cut into 1 inch thick slices }
butter – as needed for frying

1. In a bowl whisk together the egg yolks & 1/4 cup of the brown sugar. Set aside.

2. In a medium saucepan, stir together the cream, milk, salt, 1/4 cup brown sugar and place over medium-high heat. When the mixture approaches an almost simmer, reduce the heat to medium.

3. Ladle out a scoop of the hot cream mixture and, whisking the eggs constantly, add the cream to the bowl with the egg yolks. Repeat, adding another ladle-full of the cream mixture to the bowl with the egg yolks, continuing to whisk. Pour the egg yolk mixture back into the saucepan.

4. Using a rubber spatula, stir the mixture constantly over medium heat until it is thickened and coats the back of the spatula. { it gets quite clumpy as you can see from the photo, but don’t worry we’ll strain it in the next step to get rid of these clumps }

5. Strain the custard through a fine-mesh sieve into a clean bowl and stir in the vanilla extract. Place the bowl in an ice bath and stir the mixture occasionally until cool.

6. Remove the container from the ice bath, cover and refrigerate until completely chilled, at least 2 hours or overnight. Or, you can stick it in the freezer for an hour, like I did!

Make the Maple Glaze:
1. Mix the powdered sugar, maple syrup & milk together until smooth. Set aside

Make the French Toast:
1. Whisk together eggs, cream, vanilla, salt, cinnamon, nutmeg and set aside.

2. Place bread slices in a shallow dish large enough to hold the sliced bread in a single layer. Pour the egg mixture over top and let it soak for a minute or 2. Flip the slices over and let soak for another minute.

3. Heat some butter in a frying pan over medium heat. Fry half the slices of bread so they are golden brown on both sides, make sure they are cooked all the way through { to test: insert a tooth pick in the middle to make sure it comes out clean } Set them aside when done and repeat with the other slices.

4. In a heat safe dish, put a heaping spoonful of the maple glaze in and spread it around. Let it melt a bit. Place each slice of french toast in the dish on top of the maple glaze. Butter them, then spread maple glaze over them as well! Set them aside to cool.

5. Resist the urge to eat them!

6. Once cooled, cut each slice into small chunks. Let them cool for about 15 more minutes.

Freeze the ice cream according to the ice cream maker’s instructions, add some chunks of the french toast during the last few minutes of churning. As you transfer the ice cream to the storage container, alternate layers of the ice cream with more french toast chunks and maple glaze. Enjoy right away OR place in freezer for another hour! You can also add extra maple glaze on top to serve!
