polenta stacks

I’m all over stacking food! There are some great recipes out there for stacks and I thought I’d share my own version!
I wanted to include haloumi in the mix because ever since I had haloumi when I was in Australia, I am officially addicted! It’s so good!
These stacks are really easy to make and are perfect as an appetizer for entertaining or special occasion. You could stack them with anything really. I’ve also made these with zucchini, spinach and parmesan cheese & tomato, basil. All totally delicious! You can’t go wrong with stacks! Mmmmmm sooo tasty!

Ingredients:
polenta  { I used a pre-made polenta log from the store }
zucchini
haloumi cheese { also spelled “halloumi” }
olive oil { enough for frying }
balsamic glaze:
1/2 cup balsamic vinegar
1/4 teaspoon brown sugar

Directions:
1. cut polenta into 1/4 inch thick slices * optional – cut each slice in half, then in half again for little triangles
2. fry polenta in olive oil { or butter } until golden brown on both sides
3. boil vinegar & brown sugar for 1 minute, reduce heat and let simmer until vinegar has reduced to half. set aside and let cool & thicken
4. slice zucchini and cut in half, lightly pan fry slices
5. cut haloumi into 1/4 inch thick slices and fry in a bit of olive oil until browned on both sides
6. now it’s time to stack! polenta, zucchini, haloumi then drizzle balsamic glaze over top!

super easy and yet totally delicious! these were a huge hit! oh how I love haloumi
